Roasted Sweet Potato, Kale and Chicken Bowl

This recipe is definitely a "feeling super lazy tonight" kind of meal. Which is a win, in my book. But even better than that, this dish is *super* yummy and is also very healthy: the kale provides more nutrients than spinach, the sweet potatoes contain a ton of fiber, vitamins and minerals, and the chicken is a nice lean protein that compliments the flavors of the kale and sweet potatoes. Sprinkling with goat or feta cheese provides some calcium while adding a decadent feel to it all.

Roasted Sweet Potato, Kale and Chicken Bowl

Makes two servings



Ingredients:


  • Two chicken breasts
  • One large sweet potato or yam
  • Two large handfuls of kale, destemmed and shredded (most grocery stores now offer prepackaged)
  • Feta or goat cheese, optional

Instructions:

  1. Prepare chicken breast by brushing with olive oil and sprinkling with salt, pepper, and garlic powder (or use any seasoning you like!).
  2. Puncture the sweet potato with a fork several times and microwave for approximately 6 minutes or until it is slightly soft throughout -- you still want a slight firmness to it.
  3. Let the potato cool a few minutes before peeling the skin off and cutting it into cubes. Toss with olive oil and season with salt and pepper. Baking it after it's already slightly cooked makes for a crispy exterior and soft middle.
  4. Bake the chicken and sweet potato on a foil lined pan at 350 for 30 minutes, or until the internal temperature of the chicken reaches 165 and the potatoes are crispy. Flip the potatoes halfway through. Slice the chicken once cooled slightly.
  5. While potatoes and chicken are roasting, massage the kale with a tablespoon of olive oil and a sprinkle of salt (yes, I literally mean to place the kale in a bowl and, using your bare hands, knead it like you would dough..massaging the kale gives it a softer texture and makes for a more mild flavor).
  6. Equally divide the kale, sweet potatoes, and sliced chicken breast into two bowls (I recommend bowls because they're fun to eat out of, but of course plates work, too 😏). Sprinkle with the feta or goat cheese if desired.
  7. I don't usually put any sort of sauce over this, but drizzling with some olive oil and balsamic glaze or even your favorite salad dressing would be nice! Enjoy!
