Avocado toast



I know avocado toast has gotten the stigma of being purely a millennial luxury, but there's a reason so many people (of all ages 😏) love it! Besides being delicious, it's also full in fiber, antioxidants and healthy far. I top whole wheat toast with half of a sliced avocado and a sunny side up egg (for extra protein and because, yum) and sprinkling with Trader Joe's Everything But the Bagel seasoning. Tasty + super filling = a win in my book...

Ingredients

  • Two slices whole wheat bread
  • 1 small, or 1/2 large, avocado
  • 2 large eggs
  • Trader Joe's Everything But the Bagel Seasoning (or salt, pepper, garlic salt and sesame seeds, mixed)

Instructions

  1. In a non-stick or pre-sprayed pan over medium-low heat, crack two eggs and let cook until whites are cooked solid - about 5 minutes (but even scrambled would be good!)
  2. While eggs are cooking, thinly slice avocado and toast bread.
  3. Layer avocado on toast, place one egg per slice of toast, and sprinkle with seasoning. Enjoy!
