4 Ingredient Paleo Pancake
I really love when I can make a delicious and healthy meal with minimal ingredients. And I don't really follow a paleo diet, but I do appreciate the concept of focusing on whole foods and avoiding (as much as possible) processed foods, high-fructose corn syrup, trans fat, etc. I *love* pancakes but ones made with a ton of butter, eggs and white flour can really weigh me down. With those things in mind, I created this easy and paleo focused pancake that you can enjoy guilt-free.
4 Ingredient Paleo Pancake
Makes one large pancake
Ingredients:
- One medium ripe banana
- One large egg
- One teaspoon baking powder
- One tablespoon coconut or almond flour (can use regular flour but the texture will be different and it won't be paleo)
Instructions:
- Break the banana up into pieces and place into a medium sized bowl. Add the egg, baking powder and flour.
- Using an immersion blender, blend ingredients together until they form a batter. (If you don't have an immersion blender, you can omit the bowl and just place everything into a regular blender)
- Preheat a medium sized pan over medium-low heat. Spray with cooking spray or coat with olive or coconut oil.
- Pour prepared batter into pan.
- Let cook for approximately 5 minutes, or until bubbles start to form and the batter solidifies. Keep a close eye on the heat and adjust as necessary - I've found that the pancake can burn easily. Carefully flip the pancake and let cook around 3-5 more minutes on the other side, or until it's solid throughout.
- Top with whatever your heart desires 😊 My go-tos usually include nut butter, shredded coconut, fresh berries and pure maple syrup. Enjoy!
