Oatmeal Protein Pancakes

Hello world! And happy Friday! It's been over a month since I've posted (whaaat?! where has the time gone?!) and I thought I would dip my toes back into the blogging world by offering a yummy pancake recipe. This is a single serve pancake full of protein and fiber, so it's perfect fuel for after a morning workout. It's also delicious and can be enjoyed casually on a weekend morning.


Oatmeal Protein Pancake



Ingredients
  • 1/2 cup old fashioned oatmeal 
  • 2 egg whites 
  • 1/2 tablespoon baking powder
  • 1/2 tablespoon chia seeds
  • 1 teaspoon Truvia or cane sugar
Notes:
  • I like to use old fashioned oatmeal because they have a heartier texture than quick oats, which I think get too mushy, but either would work.
  • For the egg whites, I use actual eggs and either save the yolks for another recipe or give them to my dog for a yummy treat. You can also use the egg whites that come in a carton but it may affect the texture and cooking process. I highly recommend using real eggs.
  • The chia seeds are optional, but I like to add these tiny nutritional powerhouses because they are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron and calcium.

Instructions
  1. In a small bowl, mix the oatmeal, baking powder, sweetener and chia seeds (if using).
  2. If you're using actual eggs, separate the whites from the yolks. Save the yolks for later or discard. Alternatively, you can use the equivalent amount of two egg whites of the egg whites from a carton. Add to the dry ingredients. Mix well.
  3. Preheat a small pan on medium heat and spray with cooking spray (I personally like the PAM baking spray).
  4. Pour batter into pan and let cook for 3-5 minutes, or until edges get golden brown and egg whites solidify. Carefully flip and let cook for 1-2 more minutes, or until cooked throughout.
  5. I love to top with sliced bananas, berries, sliced almonds, and nut butter of choice (my fav is Justin's maple almond butter). But any toppings would be fantastic, even some pure maple syrup. Enjoy!
